Qualities: Crataegusis a thorny shrub or tree with stems and trunks that consist of hard wood and gray bark, often having tri-lobed leaves and white flowers that are similar to other genera in the Rosaceae family and bearing bright red berries.
Common Use: You can enjoy hawthorn berries in many ways. Try adding them to your breakfast cereal or oatmeal, sprinkle them on salads or desserts, blend them into smoothies or trail-mixes, or when making a tea, or simply eat as-is for a lovely snack! Like with any dried fruit, you can soak them in water to soften them before use and don’t forget to use the soaking water with the berries in all your recipes to add a bit of nutritious sweetness.

Production: Gotu Kola is a frost tender, flowering perennial that is native to wetlands in Asia. The above ground parts are harvested manually after the three month maturation period.
Qualities: Gotu kola is used for its botanical potency, nutrient richness, and to add flavor to food. It is a treasured herb in traditional Chinese medicine as well as in Ayurvedic medicine for its effect on mental focus, memory, and cognitive function. It is known throughout Asia for its calming effect and its ability to soothe mental agitation.
Common Use: Gotu kola has a sweet, bitter, astringent flavor and can be brewed into a pleasant tea, or used in capsules or tinctures.

Properties: Dandelion is an edible perennial herb with deeply cut leaves, yellow flowers, and has a thick taproot which is dark brown on the outside and white on the inside. It is native to most of Europe, Northern Africa, and Asia, but now has naturalized all over the world alongside roads and in lawns as a common weed. It’s botanical name Taraxacum is derived from the Greek words ‘taraxos’ meaning disorder and ‘akos’ meaning remedy, referring to dandelion’s myriad of healing properties.
Qualities: There are medical references as early as the 10th century for the use of taraxcacum by Arabian physicians as a remedy for liver and kidney complaints and dandelion root is valued for the same reasons to this day. Studies have shown that dandelion stimulates bile flow and has a mild diuretic effect. According to some nutritional analysis, dandelion root contains substantial levels of vitamins A, C, D, B-complex, iron, magnesium, zinc, manganese, choline, calcium, boron, and a high amount of potassium.
Common Use: Roasting the root gives it a coffee-like taste. To make dandelion root coffee, carefully roast the cut root in a pan or oven or use 1 tsp of our roasted dandelion powder for 15 to 20 min, strain and add dairy or dairy alternatives, and sweeteners as desired.
For dandelion root tea, dissolve 1 tbsp of roasted dandelion root, 1 tsp of minced, fresh or dried ginger root, and one cardamom seed in two cups of water. Steep the mixture for 5 to 10 minutes, strain, add sweetener to taste, and enjoy! Dandelion root can also be blended into smoothies, mixed with juices, or sprinkled over cereal and oatmeal.

Qualities: Chamomile has served as a gentle cure-all herb for centuries. It is often used to calm and soothe the nervous system and the digestive tract and is mild enough to be consumed by children and babies. It can also be used topically for its antiseptic and anti-inflammatory properties on irritated skin and slow healing wounds.
Common Use: Chamomile is most often brewed as a tea. It has a mild, earthy flavor, slightly reminiscent of apples or pineapple. Dried flowers can also be added to baths for a relaxing effect, or used as a compress on the skin.
