Organic Cacao Powder (Theobroma Cacao)

Production: After the ripe pod has been cut from the tree, it is opened, the rind discarded, and the pulp and seeds laid out for several days. During this time the pulp liquefies or “sweats” and fermentation starts, which softens the bitter taste and helps to unlock the full aroma of the cacao bean. This fermentation process is usually followed by gently roasting the beans to enhance the chocolate aroma. The beans are then crushed and their thin skins removed so that only pieces or “nibs” remain. Cacao nibs are then ground into a thick brown liquid called cacao paste (aka cacao mass or liquor) which is made up of cacao butter (55-60%) and suspended fine cacao particles. This cacao paste is subsequently pressed until it separates into cacao butter and a cacao “cake” which is then ground to produce cacao powder.Qualities: Cacao powder has the lowest fat content compared to all other cacao products. Cacao is believed to contain high amounts of antioxidants such as flavonoids, and many other nutrients and minerals like stearic and oleic fatty acid, anandamide (the bliss chemical), theobromine, manganese, zinc, copper, sulfur, PEA, and tryptophan. The list of cacao’s acclaimed health benefits is lengthy and includes anti-inflammatory and heart-protective properties, calming hormones, restoration of feelings of well-being, increased energy, fighting chronic fatigue, anti-aging, and appetite-suppressing properties, improved kidney and cognitive functions, skin and tooth protection, and more. No surprise the Incas considered cacao to the “drink of the gods” which gave rise to the scientific name of the cacao tree Theobroma cacao, theo, meaning god, and broma meaning drink. Cacao has been cultivated in Ecuador since the 17th century and was the main product of export up until the 1920s.
Common Use: Cacao powder can be enjoyed in countless recipes and food preparations, raw, cooked or baked, sweet or savory…however you want to experience the uniquely wonderful taste of chocolate.
Storage: Best kept at room temperatures around 20C (68F), away from direct sunlight, protected from moisture, and tightly sealed.

Production: Yerba Mate belongs to the Aquifoliaceae family, which is originally from the subtropical regions of South America, but is also present in the southern region of Brazil, and in the northern regions of Argentina and Paraguay. Our mate is grown in Brazil, in the wild among the local plants and animals, and is harvested every 2 years in alternating patches, so as to ensure a well developed plant and nutritional profile, with the intention of preserving the sustainability of the area. It was first consumed by the indigenous Guaraní and Quechua people who drank tea made from the leaves. In present-day South America (particularly Argentina, Uruguay, Paraguay, Bolivia, Chile, and southern Brazil), yerba mate continues to be a widely consumed staple and is a celebrated part of everyday culture.
Qualities: Mate has been claimed to have many positive effects on human health. In some cases it has been shown to be useful as a weight loss tool, to improve the mood, and increase mental energy and focus.
Common Use: Mate is most commonly prepared as a tea. Traditionally, it is drunk from an apple-sized, hollow gourd (called mate in Spanish), through a metal straw (bombilla), refilled, and passed along. It is made by filling the gourd ¾ full with the dried leaves and then covering it with water that is hot but not boiling. Sugar may be added if desired. Mate can also be prepared with cold water or lemonade (called tereré).
Internationally, mate is enjoyed as a tea, in the traditional vessel or in tea bags. It has a bitter, yet refreshing flavor and is a well-balanced stimulant that provides energy and nutrition. The caffeine content of yerba mate varies between that of green tea and coffee. It can be prepared with milk, honey, lemon, mint, and many more delicious combinations.

Production: This raw bee pollen was collected from Cistus blossoms (aka Rock Rose). Beekeepers then ethically harvest the pollen by gently removing it from the hives without harming the bees or disturbing their routine. The pollen is carefully dried in the open air to retain optimal nutritional integrity. During the collection process, the pollen is never heated or ground up resulting in an extremely high-quality pollen which is completely natural and raw.
Bee pollen is sometimes called “Nature’s gold”. Just imagine, one teaspoon of pollen takes one single bee eight hours a day for one month to gather! Each bee pollen granule contains over two million grains of flower pollen and one teaspoonful contains over 2.5 billion grains of flower pollen. Consume mindfully and gratefully!
Bee pollen is considered one of nature’s most complete foods as it contains nearly all nutrients required by humans. Superior Grade Organic Matcha Green Tea Powder (Camellia sinensis)

Production: Matcha is known to be the finest green tea in the world. Shade-grown (to enhance chlorophyll content) and hand-picked, it is made from the finest whole tea leaves. After stems and veins have been removed, the leaves (aka Tencha) are carefully stone ground on artisanal granite mills to produce a very fine (5-10 microns) powder which means you are consuming the entire leaf when drinking Matcha.
There are many different grades of Matcha, ranging from ceremonial grade (most expensive and primarily used for tea ceremonies in Japan) to Ingredient/Food grade (more affordable as it is blended with older leaves, resulting in a stronger flavor). This Superior grade Matcha is an excellent choice for a tasty and healthful drinking Matcha with a rich and delicate flavor.
Qualities: Matcha drinkers receive 100% of the benefits of the whole green tea leaf, enjoying and benefiting from its high levels of antioxidants (including the powerful EGCg), amino acids, vitamins, minerals (such as selenium, chromium, zinc, and magnesium), chlorophyll and fiber. Some studies have shown matcha to assist in reversing cancer and boosting metabolism.
Suggested use:
Classic Japanese Matcha tea preparation:- Place appx 1/2-1 tsp of matcha into a small hand sifter over a teacup or bowl
- Sift the Matcha into the cup/bowl to avoid clumps from forming in the tea (optional, but strongly recommended)
- Add 2-3 oz. (less than 1/3rd of the cup/bowl) of pre-boiled water (~180F/80C)
- Using a bamboo (or other whisks), whisk the tea briskly in an “m” or “w” motion. This whisking process aerates the tea, creating a nice frothy layer on the surface
- Gently rub the surface with the bamboo whisk to rid the froth of any large air bubbles.
- Add up to 6 oz. of hot water to taste (optional)
- To make a matcha latte, add some milk to taste (optional)
- Enjoy!
Storage: Store in a cool, dark, dry place. Light exposure will fade the powder and lower the quality!

Organic Arrowroot Powder (Maranta Arundinacea)

Arrowroot powder (aka arrowroot flour and arrowroot starch) is an easily digestible starch derived from the tropical tuber of the arrowroot plant. Manufacturing involves mechanical mashing of the rootstock into a pulp, separating the starch from its fibrous component by forcing it to through a screen, and finally drying and grinding it into a fine, lightweight powder.
Qualities: Arrowroot is tasteless, won’t change the color of your food, and is neither affected by freezing nor weakened by acidic ingredients. Arrowroot imparts a shiny gloss to foods and will not make your sauces turn cloudy as other starchy thickening agents would. It thickens at a lower temperature than other starches such as flour or cornstarch and is, therefore, less likely to burn. Please note that arrowroot becomes slimy when mixed with milk products and thus Cornstarch is the best choice for thickening dairy-based sauces.
The lack of gluten in arrowroot powder makes it a wonderful addition to gluten-free baking. When baking with nut flours, adding one tablespoon of arrowroot starch to your recipes will help to make your cakes, cookies, and muffins softer and less dense.
Common use: Arrowroot powder can be used as a thickener for sauces, gravies, or puddings, and is well known for producing crystal clear fruit glazes and jellies. It also prevents ice crystals from forming in homemade ice cream!
To thicken with arrowroot, blend about 2 Tbsp of powder with ¼ cup of cold liquid before adding it to a hot liquid (1 Tbsp thickens about 1 cup of liquid). Remember to add this mixture towards the end of your recipe as it should only be heated until it thickens and then be removed immediately to prevent the mixture from thinning. Overheating tends to break down the thickening property.
Arrowroot powder is also commonly used as a base for many body care formulations and is the main ingredient for most body powders.
Substitute: Tapioca starch has similar qualities and can be used as a substitute.
