Qualities:Â Raspberry leaf is a very pleasant tasting herbal remedy, similar to that of black tea, but without the caffeine content. It is rich in vitamin B, iron, magnesium, potassium and calcium, in an easily absorbable form. In herbal medicine, raspberry leaf is seen to be very beneficial for the female reproductive system. It is used externally to soothe sunburn, eczema, and rashes. It can be used by swishing in the mouth to alleviate symptoms of gingivitis or gum disease.

Production:Â Nettle (aka stinging nettle) is a common botanical, native to Africa and western Asia. It has since become naturalized across the globe and can be found wild in many parts of the world. It grows in temperate climates, preferring shady regions with moist soil. Stinging hairs cover the live plant, helping to protect it from predation. When touched, the hairs cause stinging welts due to the content of formic acid. While the stings can be painful, they don’t last long and rarely cause serious harm.
After being picked, the acid deteriorates quickly and the stinging hairs begin losing potency within minutes. The harvested leaves are a favorite source of medicine and have also been used for centuries for food and fabric. The healing powers of nettle are well steeped in the folklore and traditions of various cultures.
Qualities: Nettle is considered a very nourishing herb, healing both internally and externally, supportive of women’s health and fertility, naturally detoxifying, and much, much more. The leaves offer a long list of essential minerals including iron, calcium, potassium and magnesium and many other nutritive components including formic acid, histamine, serotonin, choline, minerals, chlorophyll, amino acids, lecithin, carotenoids, flavonoids, sterols, tannins, and vitamins.

Production:Â Matcha is known to be the finest green tea in the world. Shade-grown (to enhance chlorophyll content) and hand-picked, it is made from the finest whole tea leaves. After stems and veins have been removed, the leaves (aka Tencha) are carefully stone ground on artisanal granite mills to produce a very fine (5-10 microns) powder which means you are consuming the entire leaf when drinking Matcha.
There are many different grades of Matcha, ranging from ceremonial grade (most expensive and primarily used for tea ceremonies in Japan) to Ingredient/Food grade (more affordable as it is blended with older leaves, resulting in a stronger flavor). This Superior grade Matcha is an excellent choice for a tasty and healthful drinking Matcha with a rich and delicate flavor.
Qualities:Â Matcha drinkers receive 100% of the benefits of the whole green tea leaf, enjoying and benefiting from its high levels of antioxidants (including the powerful EGCg), amino acids, vitamins, minerals (such as selenium, chromium, zinc, and magnesium), chlorophyll and fiber. Some studies have shown matcha to assist in reversing cancer and boosting metabolism.
Suggested use:
Classic Japanese Matcha tea preparation:- Place appx 1/2-1 tsp of matcha into a small hand sifter over a teacup or bowl
- Sift the Matcha into the cup/bowl to avoid clumps from forming in the tea (optional, but strongly recommended)
- Add 2-3 oz. (less than 1/3rd of the cup/bowl) of pre-boiled water (~180F/80C)
- Using a bamboo (or other whisks), whisk the tea briskly in an “m” or “w” motion. This whisking process aerates the tea, creating a nice frothy layer on the surface
- Gently rub the surface with the bamboo whisk to rid the froth of any large air bubbles.
- Add up to 6 oz. of hot water to taste (optional)
- To make a matcha latte, add some milk to taste (optional)

Production: Lobelia is a small, low-growing plant in the bellflower family that produces vibrant purple-blue flowers. The aerial parts of the plant are traditionally used to combat inflammation of the skin and respiratory disorders. Production:Â Hibiscus plants grow in most tropical areas of the world. It’s known as flor de Jamaica in Mexico, sorrel in the Caribbean, and Roselle in many parts of the world. There are over 220 species with a variety of vibrantly colored flowers.
Qualities: The hibiscus flower has been shown to be almost as antioxidant packed as Matcha powder. No surprise it is used in many parts of the world to treat an array of ailments such as fevers, stomach pain, high blood pressure, and bacterial infections. It is known for being very rich in manganese and thus it is recommended to limit intake to 1 quart/day.
Common Use:Â Hibiscus flowers are most commonly used in tea and it’s what gives the “zing” to Red Zinger Tea. It has a fresh, tart flavor that can be sweetened if desired. Hibiscus can be brewed and consumed hot, for a warming, comforting tea, or made into a pleasantly refreshing iced tea (a staple of Mexican cuisine known as agua de jamaica).

Organic Dandelion Root (Taraxacum Officinale)

Properties: Dandelion is an edible perennial herb with deeply cut leaves, yellow flowers, and has a thick taproot which is dark brown on the outside and white on the inside. It is native to most of Europe, Northern Africa, and Asia, but now has naturalized all over the world alongside roads and in lawns as a common weed. It’s botanical name Taraxacum is derived from the Greek words ‘taraxos’ meaning disorder and ‘akos’ meaning remedy, referring to dandelion’s myriad of healing properties.
Qualities:Â There are medical references as early as the 10th century for the use of taraxcacum by Arabian physicians as a remedy for liver and kidney complaints and dandelion root is valued for the same reasons to this day. Studies have shown that dandelion stimulates bile flow and has a mild diuretic effect. According to some nutritional analysis, dandelion root contains substantial levels of vitamins A, C, D, B-complex, iron, magnesium, zinc, manganese, choline, calcium, boron, and a high amount of potassium.
Common Use: Roasting the root gives it a coffee-like taste. To make dandelion root coffee, carefully roast the cut root in a pan or oven or use 1 tsp of our roasted dandelion powder for 15 to 20 min, strain and add dairy or dairy alternatives, and sweeteners as desired.
For dandelion root tea, dissolve 1 tbsp of roasted dandelion root, 1 tsp of minced, fresh or dried ginger root, and one cardamom seed in two cups of water. Steep the mixture for 5 to 10 minutes, strain, add sweetener to taste, and enjoy! Dandelion root can also be blended into smoothies, mixed with juices, or sprinkled over cereal and oatmeal.

Qualities: Nepeta catariais a short-lived perennial, herbaceous plant that grows to be 50–100 cm (20–40 in) tall and wide, and that blooms from late spring to autumn. In appearance, N. cataria resembles a typical member of the mint family of plants, featuring brown-green foliage with the characteristic square stem of the plant family Lamiaceae. The coarse-toothed leaves are triangular to elliptical in shape. The small, bilabiate flowers of N. cataria are fragrant and are either pink in colour or white with fine spots of pale purple.

Production:Â Calendula, also known as Marigold, is an annual herb with bright orange or yellow flowers which are harvested and dried after full bloom in summer.
Qualities:Â Calendula has been used for centuries to colour and spice foods (most commonly soups and butter) as well as a dye to colour textiles and hair. It is also well known as a soothing first aid remedy, used topically on burns, cuts and skin irritations, and used as an anti-inflammatory, anti-bacterial tea, that is said to help treat urinary tract infections.
Common Use: The dried flower petals can be used on their own as a soothing herbal tea or in tea blends (Children’s tea, Herbal Nighttime tea), as an herbal compress, stored in vinegar or alcohol to create a tinctures, infused in oil which has many cosmetic uses, or mixed into homemade soaps, lotions, and salves.
Safety: People with allergies to other members of the Asteraceae family (ie. feverfew, chamomile, or echinacea) should exercise caution with calendula, as allergic cross-reactivity to Asteraceae plants is common. Organic Arrowroot Powder (Maranta Arundinacea)

Arrowroot powder (aka arrowroot flour and arrowroot starch) is an easily digestible starch derived from the tropical tuber of the arrowroot plant. Manufacturing involves mechanical mashing of the rootstock into a pulp, separating the starch from its fibrous component by forcing it to through a screen, and finally drying and grinding it into a fine, lightweight powder.
Qualities: Arrowroot is tasteless, won’t change the color of your food, and is neither affected by freezing nor weakened by acidic ingredients. Arrowroot imparts a shiny gloss to foods and will not make your sauces turn cloudy as other starchy thickening agents would. It thickens at a lower temperature than other starches such as flour or cornstarch and is, therefore, less likely to burn. Please note that arrowroot becomes slimy when mixed with milk products and thus Cornstarch is the best choice for thickening dairy-based sauces.
The lack of gluten in arrowroot powder makes it a wonderful addition to gluten-free baking. When baking with nut flours, adding one tablespoon of arrowroot starch to your recipes will help to make your cakes, cookies, and muffins softer and less dense.
Common use:Â Arrowroot powder can be used as a thickener for sauces, gravies, or puddings, and is well known for producing crystal clear fruit glazes and jellies. It also prevents ice crystals from forming in homemade ice cream!
To thicken with arrowroot, blend about 2 Tbsp of powder with ¼ cup of cold liquid before adding it to a hot liquid (1 Tbsp thickens about 1 cup of liquid). Remember to add this mixture towards the end of your recipe as it should only be heated until it thickens and then be removed immediately to prevent the mixture from thinning. Overheating tends to break down the thickening property.
Arrowroot powder is also commonly used as a base for many body care formulations and is the main ingredient for most body powders.
Substitute: Tapioca starch has similar qualities and can be used as a substitute.
